Grace Peterson’s creamed corn

From a saint of the congregation:
She makes a doubled recipe:
80 ears of corn
2 pints whipping cream
2 lbs butter
salt
***
cut kernals off the ears
In a large roaster:
mix corn with whipping cream and butter
put into a 325-350 degree oven
Stir every 15 minutes for 1 hour
remove from oven
let cool
package into bags and freeze

Today is my last official day at GC!! Besides being relieved, I find myself with a bag full of different emotions: sad, disappointed, irritated (that I have to go up there again– this one is puzzling), anticipation.
The new things, CPE and new job, won’t start for another week. I feel anxiety at the unknown, anticipation, [...]

crunch time

The “pre-vacation crunch” is beginning. In the next 48 hours, I need to accomplish the following:

Finish my work at GC - specifically, being there from 9-12 tomorrow and finish cleaning out my office, walking TB through the electronic file archive disc .
Deposit rent money into the bank
Begin packing; wherein I will find what needs [...]
