1. Scratch or mix? Buttermilk or plain?
I’m a fan of Krusteaz mixes. All of them. The buttermilk especially but also the blueberry. I think this comes from my years of camping. A “just add water” mix is great for those sorts of cooking experience where you don’t have a lot of fancy counter space, or refrigeration. Add water and cast-iron and go!
2. Pure and simple, or with additions cooked in?
The boys like plain, but I love blueberries, chocolate chips or even other kinds of berries in them.
3. For breakfast or for dinner?
yes.
Weekday breakfasts are little to rushed for anything beyond instant oatmeal for a cooked version, so mostly I’ll mix pancakes up for dinner.
4. Preferred syrup or other topping? How about the best side dish?
The more the merrier here. I love it all, but not all at once.
Best side dish is a couple of strips of bacon and a glass of fresh squeezed OJ.
hmmm. I think I’ve just figured out what’s for dinner tonight!
5. Favorite pancake restaurant?
This is a hard one, because I don’t usually like to order pancakes when I go out. Back in the day, I loved a place called the Pannekouken Hus (spelling??) but they didn’t serve flapjack type pancakes, they were more like Belgian pop0ver souffles masquerading as breakfast platters.
I’m emotionally and physically wiped out today. On top of everything else, Libby the Wonder Poodle has been up and wanting breakfast and potty at 4:30 almost every morning this week. So after Breakfast for Supper tonight, I think I’m going to bed.

Now, I have to rethink my dinner menu. I’m the only one in this homestead who believes it is OK to have breakfast for dinner. the other aliens living here must have been dropped off while I was asleep.

I love Krusteaz fat free blueberry muffins, but I’ve never tried their pancakes. We always use Bisquick. Now I think I’m going to try Krusteaz. And oh yeah, breakfast for supper. It’s a winner! I hope you get a chance to relax this weekend.
